Hats Off

There are people who touch our lives in gentle ways.  Often, we don't know the impact they've had at the time, so of course, we don't thank them.  Then life "happens" and time flows on, your paths don't meet, and then someday you hear their name or something jogs your brain and you think: I never said thank you. Too often, it's too late.

About a dozen years ago, one of those Special People crossed my path here in Alaska.  I'd just lost another friend to cancer and saw a poster for a cooking class centered around an anti-cancer diet.  It was free.  I had time on my hands and a grudge to settle with the disease.  So I went to class for six weeks. It was my introduction to Vegan cooking.

That class was taught by Delisa Renideo, otherwise known as The Barefoot Gardener.  She recently published some of her best recipes in a new book, The Barefoot Gardener in the Kitchen Cookbook.

Vegans, as I was to learn, don't use animal products at all.  Their diet is entirely plant-based.  No milk, no eggs, no cheese.  And of course, no meat.
Nonetheless, everyone seemed sane and healthy, and I was intrigued. 

Like most of you reading this I briefly entertained the image of my life with food being reduced to gnawing on stalks of celery and maybe a baked potato with salt for Sunday dinner.  I also had a twinge of the, "oh, no, not some kind of weird vegetarian cult!" suspicion, but I suppressed those biases and fears: with people dropping like flies from cancer and suffering from awful chronic diseases, it was obviously time to look for answers.

And anyway, a free cooking class where you get to taste the results seemed harmless enough for a respectable Granny to indulge in.  Indulge, I did.  It was all delicious. 

I learned how to "massage" kale -- and otherwise, would probably have never eaten it.  I learned lots of other wonderful things--- how to make a delicious cheese sauce without cheese, how to sweeten things without sugar (or nasty unnatural substitutes), and miracle of miracles, a healthy cookie recipe that my son liked better than standard Chocolate Chip Cookies.

If the benefits had stopped there, I would have called it one of the Top Ten Freebie Bargains in my whole life, but it didn't end with that.

As I s-l-o-w-l-y adjusted to my new knowledge base and began to implement what I had been taught, I also began to think more about nutrition and what I was eating and about how food is produced, and why so much of what we eat is nothing but air: empty calories, that is, calories that add to our waistlines, but don't nourish us at all.

It would take a miracle of Biblical proportions to turn my husband into a vegetarian, much less a vegan, but nonetheless the "little seed" Delisa planted in my brain persisted and bore more fruit.  I began growing basil for pesto and other kitchen herbs and adding them to salads and soups. I whittled down the amount of meat the family was eating and soon, I was able to sneak in entire vegetarian meals without anyone noticing. 

They all just adjusted and chowed down and didn't seem to notice that...bit by bit, we were converting from a Standard American Diet (SAD in more ways than one) to a better diet, a more nourishing diet, and did I mention-- a cheaper diet?

Oh, yes, even though I took the pledge and converted to 100% organic and non-GMO, our food budget went down by a whopping 25%.  I can't even imagine how much money that has saved us over the last twelve years, but it is a lot of money.  A lot.

And, the adventure continued.  Somehow that little cooking class with Delisa Renideo hit the reset button on my relationship with food.  No more limits!  I threw Nasturtium blossoms and sweet violets into my salads. I rediscovered mushrooms and olives. I made Artisan Bread. And it was all good.  And it was all better. 

And it was all because of Delisa and Charlie and a cooking class.

I am still not a 100% vegetarian, much less can I call myself a Vegan, but I am a lot closer to being a vegetarian than I could ever imagine being and my old "whiskey and corn chips for breakfast" diet (somewhat of an exaggeration, but not much!) is a distant memory.

The benefits from that little cooking class just keep ticking along, year after year, paying dividends in new choices, new experiences, better health and better food. 

Not everyone will be lucky enough to get a cooking class with Delisa, but everyone can buy her cookbook and use it as a portal to a whole new world of food. It's not a cheap book at $29.00, but that's nothing compared to the cost of a single doctor visit.

  1. In the mid 1990's, my common-law partner at the time was diagnosed with fibromyalgia and often had migraine headaches. In an effort to assist, I started researching at libraries to find a method of relief since it was not well defined at the time. I caught onto Bonnie Pruden's Myotherapy (perhaps a pre-cursor to Accupressure) to work on the muscle problems and over a short period of time, really helped. We did get rid of the migraines. But it wasn't the total answer.

    In 2000, I was introduced by a client to the Eat Right For Your Blood Type by Dr. Peter D'Adamo. He became a naturopath in an attempt to prove his father, also a naturopathic doctor who had discovered clinically that by changing the diets for his patients, he was having profound success. Peter was determined that his father was woo woo. So when he went to college, he was determined to scientifically prove his father wrong.

    What he found was quite the opposite. Each blood type O, A, B, and AB have a history through the evolution of man and genetically changed over time due to diet and environment. In his discoveries, he found that certain foods became poison-like to the immune system based upon the blood type.

    What his father had discovered through his practice was that by changing the diets of his patients was true. Instead of the immune system fighting off food, it would be more powerful in fighting real disease related issues. Once affirmed by the science, Peter began studying the foods to determine the chemistry of food that could be categorized and hence eventually wrote the first book.

    Long story short, as I read the book, I realized the importance of it as we began to conform our diet to his findings. There was a bit of a problem though. She was blood type O and I was A. The book handled each food item individually. I wanted a way to minimize the problem of food preparation for families with mixed blood type and also for those who were brave enough to host dinners for people with unknown blood types. I created a spreadsheet before Dr. D'Adamo did for food categories that would show each food item within a category using his breakdown of Beneficial(Medicine-like), Neutral(not medicinal but not harmful) and Non-Beneficial(poison-like).

    Having the chart made it much easier to prepare meals we could both eat without side-effects from food and on occasion cheat knowing there would be consequences similar to having an Ice Cream or Chocolate treat. It made a significant difference to our health.

    I still have the spreadsheet that perhaps needs some update, but fundamentally it is good to go. The only caviat would be to have some understanding of how food affects us to make it more likely to be followed.

    I do believe that this method of determining the type of food we eat has a major contribution to the obesity we see today. When the immune system finds an enemy, it is not always passed. The immune system surrounds the cells with fat and stores it to keep it away from healthy cells, hence... obesity could be just a result of the wrong food we think is good but our body thinks differently.

    Not to discourage anyone from pursuing the "more" vegetarian diet but it may assist any transition to better health. I will share this chart freely to anyone who desires it. D'Adamo also has a chart that can be purchased through his website.

    Disappear....3.5 years best decision ever. No money in healthly people. Including no vaccines. Eat what creator gave us... its no hard to vegan-ize all dishes ... love & peace ....

For the life of me I can't understand people latching on to all these different fad diets, with just a little in depth research one will find that vegetarians and especially vegans are the most unhealthy and emaciated looking people around with issues ranging from fibromyalgia, leaky gut syndrome,skin issues ect. Any of the wilderness living shows available i.e. Alaska the Last Frontier, Mountain Men, Life Below Zero ect all show that the main concern for these people is protien, they all spend most of their available off winter time focusing on aquiring protein, meat, I never hear any of them saying "we don't have much time, we need to get the freezer filled with salad and vegetables befor winter hits". High fat content...good fat that is. Our biggest problem today is the amount of sugar intake and low nutrition carbs. As for the blood type diet, I personally know a couple that go by that and they are the most unhealthy people in our congregation. Another issue is that our soil in this country has been completely depleted of minerals and nutrients,vitamin and mineral supplication is a must. I can speak on these things because I have experimented with all of them, I have read and researched all of them, I have seen the effects of all of them. We were not designed to live on a plant base diet just take a long hard look at the animals that live on them, and I mean food animals, cows for instance, they have six stomachs, animal that chew the cud,Deer, Moose, cattle, goats, buffalo, these animal were designed to process the plant matter into a consumable product for human consumption. Don't get me wrong, we glean much needed nutrients from fruit and veggies, there are many vitamins and minerals, depending on geographic growth location, in veggies we would not get from meat alone, not to mention the colon cleansing effect from them.
    Another issue is the mass production of meat products, just watch a few documentaries on mass chicken production, or the beef industry, all the garbage that is pumped into these animals and the horrible conditions they are raised in. Finding free range chickens and cattle, not raised on feed lots, have you ever seen a free range chicken compared to the Arnold Shwartzenegger chickens we get from the grocery store, you have to clean and dress two of then to feed a family of four. But even the fruits and veggies we get today are devoid of nutrients because of bad farming methods and pracices, it's all about the money, mass profits and fast growth rates.

    The point being is balance and paying attention to what your body is telling you, 98% of our health issues can be traced to something we ate. I have found the best source of understanding all this come from Dr. Joel Wallach, Read his book "EPIGENETICS,The Death of the of the genetic theory of disease transmission", and check out "Dead Doctors don't Lie".

    As for me...if I'm ever stuck out in the wilderness and searching for food, I'll be searching for protein first and foremost.

    1. Closet Astronot...i think you are spot on...the two worst things in our diet are carbohydrate and sugars....!!

      Dr Wallach is on "coast to coast" 640am radio (at least in Calif), and is on George Nori show as a permanent guest every Wednesday night between 10pm till about 11 or 12....!!

      It's interesting to note that he often takes calls from people on the phone, asking about their problems....hardly anyone gets past their first few systems or problems before he stops them and says you have a "gleutin" intolerance...about 95% of us are gleutin intolerant, because of all the GMO's in wheat and wheat products...and that is just about every ones problem.here...All other countries have banned GMO's from their countries as well as Monsanto...We are the only developed country in the world with so many health problems....for every ones sake, go to your doctor and see if you are "gleutin intolerant"...Yes, it is only a protein, and never really hurt anyone until they started messing with the plants genetics...now it's an epidemic...!!

    2. If you can find heritage wheat, you can likely avoid the gluten issues. Common wheat was targeted by the likes of Monsanto to change the genetics I believe intentionally to increase the harmful gluten factor for the baking industry and since it is a common additive in many recipes especially processed foods, we have both obesity and disease.

  6. If you look at our teeth and our gastrointestinal tract, you will see that we are not meat eaters nor are we plant eaters. Our bodies are not set up to digest the cellulose that’s in green plants. Most animals if not all of those animals that do eat plants that are cellulose-based, have two stomachs, or better said, they produce a cud.
    We are frugavores. We are supposed to be eating fruit. Fruit has everything in it that God meant for us to have, packaged in the way it needs to be absorbed into the body.
    The only problem is that we’ve all been eating the SAD for so many years, it’s extremely difficult to change to what we’re supposed to eat. I know because I’ve been trying for the past two years.

  7. There's an old saying in Indian Country .. I think it came from the Hopi .. "Know where your food comes from, know where your water comes from and know who your friends are." That may sound simplistic, but once we pull our heads out and have a look around, the desire to express a heartfelt 'Arrggghhh!!' and go back to sleep presents considerable challenge. Often the initial breakthrough comes from a situation that can't be ignored; a life threatening medical condition, a foreclosure, an economic problem that finds you sleeping in your car. Once the can of worms is opened and you begin to eye 'em up, you find things like fluoride, Fukushima, glyphosate, Big Pharma, polarity politics, smart meters, common core, solar minimum, pyramid economics, chem trails, autism, all manner of cancers, globalism, the deep state, etc. After a few more argghhs and some bouts with the pillow over the head in an attempt to go back to sleep, one eventually says "what do I DO with this??? Filter my water, nourish my microbiome, disengage from the corporate entity, move to the country, grow my own food, homeschool the kids, study herbal medicine, buy a gun while you can still get one, AND find money to pay the rent, or mortgage if you're luck enough to have one. This usually merits another argh and a close examination of what CAN be done... prioritizing! So what has 'true value'? Clean air, clean water, clean earth, shelter, and loved ones. Duh. Back to square one. Thanks, Anna, for sharing another solution!

  8. I tried the vegan diet about 20 years ago. After about 7 or 8 months, I developed extreme pains in my lower back. The ligaments in my back had weakened to the point that they were no longer holding the vertebra in alignment. I went to eating meat again and after 3 or four months, my back healed. We need a certain amount of dense animal protein.
    Currently, I’m doing the keto diet that Dr. Mercola is promoting. He’s written a very good book on the subject, “Fat For Fuel.” According to him, carbohydrates cause inflammation which is the cause of a lot of chronic degenerative disease. He recommends a moderate amount protein – especially fatty meat, bacon and eggs. He’s big on healthy fats like avocados, coconut oil, butter, cream, and extra virgin olive oil. This type of diet is very good for diabetics and cancer patients. Cancer cells love sugar. Excessive carbs. damage the mitochondria.

    1. Again...very good advice...people are so afraid of the word "fats" that instead of realizing that fats and proteins are good for you and not harmfharmful, that they mostly as void them, and get around sugar by using synthetic sugar like the ones in "diet sodas"....!!

  9. If you've ever watched the documentary. "Forks Over Knives' or any one of a dozen similar documentaries, you have seen that diet is curative - specifically, a vegan diet. A plant based diet - according to the all encompassing China Study and several other independent studies - has been proven to CURE cancer, reverse heart disease, eliminate type 2 diabetes, alleviate arthritis, etc. It's amazing to me to have discovered that, even in the face of these FACTS, many seemingly intelligent people would (literally) rather die than change their diet. Oh well.

  10. Anna, I'm glad for all your "benefits"! IMO the dietary choices of any adult are absolutely their own.

    My only argument in the realm of nutrition is regarding the diets of children. I would never recommend a vegan diet for children. The reason is based entirely on the traditional dietary wisdom of over a dozen isolated cultures that were visited by Dr. Weston A. Price and impeccably documented in his book: "Nutrition and Physical Degeneration." Dr. Price actually searched for a healthy vegan society and did not find any. The societies that came the closet to a vegan diet were the less healthy compared to societies with a completely mixed diet. One of the outstanding findings of Weston Price was the way that each culture nourished their mothers to be. They ate the very best of the best nutrient-dense foods which were most largely animal products including other eggs. When the babies were born they were nursed on the nutrient-dense mothers milk while the mother continued to be very well nourished with the best of what that culture had to offer.

    At least the first seven years lays sets the health foundation for life. Ideally I'd be monitoring g the child's diet as long as they remained home. Once they are on their own their diet is up to them. When the children of the isolated cultures left and ate what Price called "displacing foods of commerce" their health deteriorated. The good news is that when these same individuals returned to their diet of origin they recovered. Sometimes people need to experience some contrast to fully grok the truth. However, a child can not afford to be experimenting with contrasts before they have their foundation set. That is not an option in my book.

      Gratitude for your comment that concurs with my studies. Though in my humble experience going forth to find land and create our own farm to supply our needs of family & animals in our care began with nutritional studies and reformed study of disease.

In a time of much investigation into what constitutes a healthy diet it is worthwhile to consider the Lords instructions. Verse four has been perfectly fulfilled, and millions following these guidelines are protected from cancer, early death, and many debilitating diseases, living about 8 years longer than the general American population.


    Word of Wisdom
    A law of health revealed by the Lord for the physical and spiritual benefit of the Saints (D&C 89 “Doctrine and Covenants”) found under Scriptures at lds.org.   16. I found eating raw vegetables ground up in a blender really great. Soon I need to re-fill my quart jar and drink at least that much each day. Kale, brussel sprouts, broccolli, apples, blueberries, collard, beets and beet greens, carrots and some vanilla protein powder that has probiotics. I went from feeling sickly coughing and thinking I was soon to be dying to feeling hugely energetic and lots of little ills and stuff gone entirely.
    However I am a vegefile, and do sometimes eat fish, and eggs. A book Dr Gundry studied the diet of early people and found the grains create fat via excess energy processed by pancreas being sent by liver to store as fat all around your body like in your arteries.
    Don take it from me, read Dr Gundrys book 10 dollars or just try it and see. Little if any sugar due to the fat build up but apples, berries, nearly all vegies and nuts. Now I stay the same weight all the time and blood flow is increasaed.
    I ususally an suspect of diet book sellers but Gundry is a credible master heart surgeon and has seen how the arteries get clogged up from the grains and strong sugars like fruit juice vs the fruit itself. Just my two cents. A few vegies as mentioned above seems to last a long time and if you have a garden just shop at home in your garden.
